Noon X Herball: It’s Bigger Than You’d Imagine

Chef Vanika has teamed up with The Herball team (Michael Isted & Maxim Schulte) this month, and the collaboration spells great news for culinary enthusiasts. Inspired by their foraging trip to Sahyadri, Chef Vanika has curated a 10-course tasting menu built around the indigenous produce from Maharashtra. Additionally, expect Chef Vanika’s specials like Black buckwheat tartlet (crab- sichuan pepper, Prawn head garum- mahua shio koji, pickled star fruit), Oyster (Thangyir hot sauce, perilla seeds, tomato shio koji) and Ragi Bhakri (niger seed chutney, jackfruit, Kashmiri red chilli and chickpea miso, imli koji chutney,  kanji spiced shallots, karonda achar) amongst others. A wide range of concoctions made using karonda, mahua, jamun, ber, khus, and wild green mango forms another highlight of the menu.

Executive Chef Timothy Newton is all set to unleash his magic with a new summer menu that captures the essence of Greek cuisine with a modern twist. Tuck into main course offerings like Dakos, one of the oldest dishes in Greece (made with Cretan Barley Rusk, tomato, kalamata olives, feta, mint, and lemon). Another must-try is the Chicken and truffle bourek (a crispy phyllo pastry filled with braised chicken and graviera cheese), offering a classic dish with a modern twist. Or better yet, order up specials like the Ntolmadakia me arnaki(a tantalizing dish made with 24-hour braised lamb shoulder, stuffed vine leaf, potato, and tzatziki). Lavraki trahana, (a grilled seabass dish with tarhana pasta, prawn bisque), alongside a handful of innovatively made dips such as Avocado hummus dip, Truffle galotyri dip, and the like.
